Best way to cook snapper?

One fish I really like to blackend lightly spiced. That or broiled but easier to blacken outside.

Red snapper is great on the half shell, do it just like you would redfish.
I usually blacken or fry mangroves and they taste great.
All around snapper is an excellent fish anyway you do it.

My favorite fish, and I like it best this way.
Make a little container of tin foil, like a cookie sheet, trim off all red meat, lay snapper in it, a little pat of butter, creole seasoning, and squeeze of lemon. Put on grill till it flakes.
Fresh caught, IMO, it is the best fish in the world.

I did this- skip to 10:00 with snapper and it was fantastic. I say that as a lifelong tomato hater. Something about cooking them down like that removes the foul taste. I cooked the maters longer than he did though.

Same here i blackened some and it was fantastic. I have grilled on the scales but blackened was better IMO

Cut up tomatoes, purple onions and avocado. Season with Tony's and Italian dressing with tomatoes and onions. Bake at 375 until done ( you have about a 3 minute window from when any fish is done or, if its slightly overcooked, throw it in the trash). Remove from oven and add sliced avocado.
ETA: add some sliced lemons on top, before cooking. Then, squeeze when fish is cooked.

I like all of the above recipes but I'll give you something a little different. Filets in egg wash, than coat in a mixture of panko, Parmesan, and Tony's. Let set up in fridge for 30 minutes. Pan fry in a blend of butter and olive oil. Serve with some sort of spicy cream sauce.

Best dish I've ever had was a red snapper filet grilled on the half shell, on top of a bed of rice, and smothered in shrimp étouffée

IMO only way to screw it up is to deep fry it and even that isn't terrible. One of the few white meat fish I don't like deep fried.
I'm about to put some on the grill momentarily going to coat in olive oil and season, then sear meat down for a couple minutes then flip to half shell side, add fresh basil, rosemary and diced tomaotes cook until done and eat.
