Every time I go and buy tasso I think that it would be a lot cheaper to just make a bunch and freeze it, and it would let me use a variety of different meats to make it with. Suggestions would be appreciated.

I used pork butt. Cut it into tasso sized chunks. I found a recipe online, and basically marinated the pork in the semi wet mixture overnight. In the morning threw it on the smoker. Came out pretty good, and I just vacuum sealed it and threw it in the freezer. Too easy not to do it again.

Its really easy to do if you have a smoker. find a good rub you like, and just pay attention to the temp. That goes for tasso, and basically anything you want to smoke: chickens, sausage, slab bacon, ham, turkey, etc...

That's where I am hoping to go with this.
