I've always assumed charged tips get paid out with the normal paycheck. No idea though.

When the bill comes to your table and you pay using a card, the server brings the bill back to the computer.
Say it's 100.00 meal with 20.00 tip.
They can't just put in 100.00 because then the bank statements won't match up with the taxpayer's records. They can't just put in 120.00 of meal revenue and call it a day because you'd piss off the restaurant owner, and if you or the company were ever audited, most auditors would be want to trace back multiple transactions, and if every credit transaction they trace back doesn't have some sort of tip that would be a indicator that something isn't right.

Idk. I assumed the owner paid the employees in cash. I may be wrong. Dated a few bartenders and waitresses that always came home with cash...they never said they would get a big check for paycheck.

Paying your employees in cash is borderline retarded. You'd be surprised how easy it is to catch that sort of thing.

While I agree that the US should go to the euro model of restaurant service, where tipping is not basically expected, you need to consider the following
This is most definitely not the way it is here in america.
Now this specific quote is in reference to France, however the increase pay and benefits are basically ubiquitous throughout most if not all of the large European countries

I tried to tip a waitress in Germany when I first moved there, and she chased me out of the restaurant to give me the money I "forgot". Also had a cab driver become visibly angry when I tried to tip him. Told me he worked for a living and didn't need charity.

I'm not saying it doesn't happen. I'm just saying it is much harder to get away with when you're paying with a CC and it provides one hell of a paper trail if anyone wants to follow up on it.

In most bars employees get tipped out in cash at the end of the shift or the following day.
My current employer (Baton Rouge restaurant) does not do this purely because they do not keep enough cash on the premises to payout at the end of the night.
My credit card tips are taxed and I as a bartender am required by the company to claim 10% of my sales as cash. Some nights I make more cash but sometimes I actually am forced to claim more cash than I earned.
The differing state minimum wages for tipped employees is very frustrating. My owner has restaurants in Montana where they have to pay their employees 9.50/hour. I however work in the exact same restaurant with the same prices and get paid 2.13/hour. Where's the logic in that?

I know that but I doubt many waiters are claiming they make 50k a year

I mentioned this earlier. I'm not sure why I have to tip waiters making $10 an hour, the same as those making $3, but that's the custom, so I comply.

Very true. However most of the nicer spots here in BR have servers/bartenders who make between 50k-60k. My roommate made a little over 40k last year at a fine dining restaurant last year. And that was just what was claimed on his W2. His employer doesn't require them to claim cash so tack on another 5-10k in unclaimed tips.
He did that as a 21 yr old college kid. Lucky SOB
