As others have alluded to, it is when you see a guy with a MC patch on and you go and try to figure out if he is really in an MC or not. The phrase seems to imply that you are trying to determine if he or she is full of ish - hence the phrase mud checking. Not sure exactly how to go about mud checking someone though. Maybe try to pick a fight with them and see if they stand up for themselves? Maybe Sons of Anarchy trivia? But alas, I digress, I have made my contribution to the internet for today.
