I'm debating this as well. I can put away a little money right now for something like this, but in a year, I can afford about $200/month towards a big vacation. If I waited five or six years instead of three, my wife and I could probably live like King and Queen for a few weeks.

Break your trip up into Paris-Florence-Rome. Veuling,Ryanair,EZ Jet,etc., make it super easy to get around Europe inexpensively.

Florence and Rome are both very close and are a must see. I agree about only one day in Venice (if you even feel like heading that far away). That is what we did and it seemed like enough.

I was stationed in Italy for two years. I would say stay for 10-14 days. I would try to stay in Florence. It's basically halfway between Venice and Rome, and it's less than an hour from Pisa.
Naples and Pompeii are a little further south, so you would want to stay overnight there. Naples isn't great, but it's near Pompeii and that place is amazing.
Toarmina is on Sicily and is beautiful! You can watch Mt Etna spew lava while eating dinner on a cliff overlooking the Mediterranean.
Start learning Italian; it's very worth it. And will help you when using the train system which is the best way to travel around. The express trains are more expensive (I liked the Eurostar) but it prevents potential run-ins with gypsies who are known for theft.
No matter which area you chose to explore you will have a wonderful time!

In Venice now and we were able to do all of the sight seeing stuff in a day... tomorrow we will do a wine tasting and just walk around for our benefit and then Germany on Thursday.

I'd like to go for longer, but money is going to be an issue. Also, we have young kids, and they aren't coming with us. Not sure if I want to be away from them for more than a week. I know the wife won't.

I'd recommend against getting the Amex platinum card for this trip, as the annual fee is $450 and your trip is in 3 years, you will spend between $900 and 1350 on fees alone.
Your best bet is to see what airlines have the most convenient routes to Italy for you, and how many points that would be. All major air lines have co branded credit cards that usually come with a hefty sign up bonus, no annul fee for a year, and other perks like free bags. You and your wife should each get your own card, as flights to Europe are a lot of points. If you go this route, you shouldn't need to hold these credit cards for 3 years, and could probably wait a year to apply for them. Another option would be the chase sapphire preferred card which transfers points to a host of airlines.
Keep in mind most flights to Europe, even if paid for by miles, will have extra fees of at least a few hundred bucks. If you and your wife each get your own credit card, you should easily be able to get free flights(which will save you at least 2k), but will still have to pay the fees.
