I had some undercooked chicken from Pei Wei friday. Dude, i'd rather overcooked 10 times rather than undercooked once.

I like my burgers medium. The risk is actually relatively low. It's not the nightmarish thing that people think, it's ok if your burger isn't a hockey puck. Now if you were a baby, an old person, or immunocompromised then you should probably be more careful.
If you live your life that paranoid then you could give your burger a quick sear and set it aside and let it hang out at about 140. Doing this you can avoid denaturing the actin proteins while still pasteurizing the burger.
While I'm at it...
- You don't have to refrigerate mayonnaise
- You can keep your eggs in the pantry for months if you rub a little oil in the shell. They also do not have to be refrigerated.
If you live your life that paranoid then you could give your burger a quick sear and set it aside and let it hang out at about 140. Doing this you can avoid denaturing the actin proteins while still pasteurizing the burger.

I prefer undercooked beef. I've eaten pink chicken. Never had a problem.

went to Smith and Wollensky's for a company dinner a couple months back and a coworker ordered the tuna steak well done. I honestly couldn't believe anyone would do that.

My step-dad used to like his steaks well done as far back as I can remember. He got on a diet where he eats a lot of steak now, and now eats them like a normal person
