We used to have a horse farm. I've seen horse get euthanized "humanly" and horses get a bullet to the head. The bullet is the best way to go. The horses that got the needle knew something was up when the poison is pumping through them and they try to fight it right before they drop to the ground.

I think horses are more prone to the excitement response than small animals, so some go crazy before dropping dead. If they are tranqed first it takes the drug longer to kill them (and sometimes more). Thankfully, I wasn't there when my mare was put down. The one I was present for I was warned by the vet, but he went peacefully.
