How does one end up in this situation? My girlfriend has a lot of friends and we go out every weekend. I'll buy shots or drinks here and there, but I don't pick up tabs for anyone but myself and her.

Just have a conversation with her. Seems weird she isn't wanting to do things with you one on one (not just sex), when things are new. And stop paying for everything! I'm all for the guy picking up a tab, but its only fair if the girl reciprocates and pays the next time.
