If you are somewhere that you don't have a lot of options then sure, like traveling where you don't know the area or stuck in an airport. But if you go out of your house with the intention of eating at Applebee's as your night eating out then you are better off just grabbing something from the frozen food section at the grocery store.

But yet mom and pop places still close down there.
Problem is people expect to open a restaurant and just print money and they really have no idea how to run one.

So try to only eat at locally owned and locally sourced restaurants or at least locally owned ethnic restaurants. If I have to eat at a chain I'd prefer it to be shake shack or pf changs - still good quality - never that breaded frozen Sysco crap

A lot of chain restaurants have their employees park up front to make their parking lot look packed. Applebee's in one of them that practices this. People want to go where places look busy.

This is not the point of the existence of Applebee's. Some of them have a bunch of hot girls working there. Some have big boned moon faces.
When in college, go to each Applebee's and every other chain restaurant in town. Figure out which one has the most talent. Get a gig there. After work they all go out drinking together. This leads to sex. Most of the employees have slept with each other.
You can even fast track your way through them all by having a cool car.
