Is it illegal somehow to flip off a cop?

Disrespecting an officer while on duty is certainly illegal and will get you slapped around at minimum and possibly in jail.

In your car, no (pretty sure there was a court case [supreme maybe?] That ruled this)
But if you stick your hand out the window to do it, they can slap you with "improper signaling" or some shite.

Its rather amusing when people try to agitate cops and then complain when their is action taken by the cop.

Technically no, not in and of itself.
There might be a context issue. (in view of minors, etc.)

I found this out first hand. I was in Florida driving down the coast highway a couple cars behind a garbage truck. The garbage truck had a flock of seagulls pursuing and one of the seagulls dove and landed smack dab on my windshield and got tangled up in the wipers. I turned the wipers on and sprayed him with washer fluid and he got loose and flopped off the roof of my car into the traffic behind me, where the seagull hit a cop car
The cop pulls me over and gets his ticket book and starts writing. I ask "what am I getting a ticket for?" And the cop says:
"You flipped me the bird!"
