I think it varies from tent to tent. The tent I've been invited to has beer and some type of margarita drink. I don't think I've seen liquor.

I don't think it's beer only but I've only been a few times. Seems to me that the word "cook off," is pretty misleading because you won't see anything of the sort. A wristband/ ticket to a tent/ party will usually get you a plate of food(if you get there early) and their alcohol offering of choice. That said, each time I went I enjoyed myself but any tent worth a crap is invitation only and some are much better than others. I would think anyone's opinion of the event would be proportionate to the quality of the tent/ group they had.

I'm no expert so someone please correct me if I'm wrong...

If you have tent tickets it shouldn't be beer only unless your tent is really lame. Most you pay up front for a ticket (like $50-75 or so per day) and it's open bar and you get food. So if you paid up front, you should be getting open bar and food.
