Not sure how far you're willing to go...but I'd suggest one of the following:

Alabama - RTJ Trail
Mississippi - Gulf Coast Casino Courses
Florida - Amelia Island, Hammock Beach, or Streamsong
Georgia - Sea Island

If you want to go further I'd hit up Wisconsin or Michigan.

Whats your budget and where are you traveling from?

September is a great time to play Austin golf courses - though it may be a tad warm.

If you're looking for pure golf, then go to Bandon Dunes (Oregon). Weather will be spectacular.

If you want a quick trip from NOLA and want to spend under $500 bucks w/ lodging and 4 rounds of good golf - then Austin/San Antonio is a great bet. All depends on your travel constraints and budget

Is Sea Island affordable (I'm an OT baller of course, but not everyone is) like the Gulf Shores area?

Also how are the Boluxi casino courses? Possibly in comparison to Craft Farms and Pennisula, ect since those are courses most have played

We'd be traveling from North La. Budget is probably $500 for maybe 2 rounds 3 nights or 3 rounds 4 nights

Add Mossy Oak & Old Waverly golf course for Mississippi.

Mossy Oak is going to be finished in a month and is being built by Gil Hanse (Olympic course designer) and is in collaboration with Old Waverly (Bryan family - Bryan foods) and Mossy Oak.
They have cottages so you can stay and play also and both courses are right across the street from one another

How far are you wanting to travel? 6 hours or so north and it will be cooler than heading south.

If you do that, then I would consider Branson. People may give you shite because it is an old people vacation spot, but they have quite a few nice courses. Branson Hills(formerly Payne Stewart Course)is the nicest public course in Missouri.
Branson Hills

Then you can head just south of Branson one day to The Big Cedar Lodge Resort and play Top of the Rock course. It is nice. Lots of sand.

Then you can just choose from some of their other courses. Those two are definite visits though on any trip we take there to play.

Considering the week you're talking about, go play Whistling Straits, Blackwolf Run, and Erin Hills then watch LSU beat Wisconsin at Lambeau.

ETA - shite, nevermind. I just saw your budget.

If you're in North LA, have you ever played Mystic Creek before in El Dorado, AR?
