This has to do with the orientation of the sensor. In reality they could probably use a different shaped sensor that then crops digitally. The problem is that you them lose resolution of your video by not using the full sensor.
When you select video they really should have words on the screen recommending landscape before you press play.

Yes, really. To hold the phone up and down it falls across the hand in a natural position. To hold the phone sideways you have to either hold the phone by the edges down where it's hard to see the screen or extend your arm outwards from the body. It's elbow in for portrait or elbow out for landscape. Elbow in requires much less effort.

There are certain times portrait mode is better. For instance, sometimes my kids do funny shite and my wife or I will film it. If they're close and we're trying not to disturb them portrait captures the activity better than landscape. I mean it sucks to view on a computer, but it's better than viewing a wide screen shot with half their body cropped off.

The simple solution would be for phone manufacturers to use a square sensor. Then you could record in landscape or portrait no matter how the phone was oriented.
