Every model year of the accord and civic is consistent in the parts they use, so chop shops can take any year of either and have a high demand for the parts from them.

Because they can take the plates off the one that's been sitting in the yard and put 'em on the one that works. It's the same color and everything. Now just gotta get a sicker for the windshield....

Older cars don't have the advanced anti car theft technology and are easier to steal. Carjackings are going up because thieves can't steal cars that have advanced keys.

Are newer vehicles that easy to steal? I remember the older GM vehicles in the 1980's and early 1990's were easily stolen by cracking the steering column.
