Body of work is important for this category.
Zappa - definitely. It's taken me 40 years to really start to understand that. His humorous songs have always appealed to me (while Zappa sneered at them). The bulk of his work is not easy to get into but I find myself listening to more and more. It was his 1988 Barcelona concert on Youtube that got me back into exploring Zappa. What a tremendous band!

Lowell George is someone that has always interested me and it's become obvious that he learned a lot from his short time in Zappa's band.
Mark Knopfler - I've been a fan since Sultans of Swing. Great guitar work, I like his style of vocals, and he's written some pretty good songs. And he's been around for 35+ years now. He's had some pretty good albums post Dire Straits and worked with a variety of musicians that interest him.
Knopfler and Sonny Landreth
Emmylou Harris is one of them. She has a voice like an angel, has written some solid music though she does covers more often. Nobody sings a better duet and the list of people she's performed with is stunning (starting with her career with Gram Parsons). As producer she put together a great tribute album for Gram Parsons.

A last one I'll throw out is John Prine. What a great song writer and I enjoy the way he performs his songs. I'm always in the mood for some John Prine.

Thank you for that. Two of my favorites right there. Also agree on what you said about Zappa. A lot of people don't get it but if you do, there's a lot there to appreciate. Just saw Zappa Plays Zappa a couple of weeks ago and it was outstanding.
