One of my all-time favorites is Peace on Earth / Little Drummer Boy with Bing Crosby and David Bowie. Such a surprising collaboration, and it absolutely worked. It just strikes an emotional chord with me.

I can't come up with a single favorite. A few that stand out though are:

Christmas Canon - Trans Siberian Orchestra (non rock version)

O' Holy Night - Josh Groban or Vanessa Williams or Mariah Carey

What Child is This

Do You Hear What I Hear?

Händel's Messiah (Hallelujah)

The First Noel

Heark the Herald Angels Sing

and an underrated one imho "Jolly Old Saint Nicholas"

The Christmas Song by Nat King Cole. There are certain songs that shouldn't be covered by anyone. This is one of them along with Elvis' Blue Christmas.
