You can do an overspray over white. Fender OS'ed guitars often back in the day when custom colors were ordered. You see vintage guitars today where the outer color has worn through and the original factory color peeks out from underneath. The Fender Custom Shop also does this as requested for that reason.

You can go rattlecans over booth and both save money and get good results. Your one-stop-shop for this is ReRanch. They have STELLAR products for DIY jobs, great instructions and a discussion board for trading Q&As. Highly, highly recommended if you're serious about this.

I believe their site only had Sonic Blue?

Could be wrong though.

Is one can enough for one guitar body? Or is it more than enough? How many coats?

I'm sure these are answered in the tutorials you mention. Just wondering though.
