Mozart-Concerto for Oboe and Orchestra. The oboe work is out of this world. For years people thought it was a violin concerto and were amazed when they learned it was for oboe because it is so difficult.
Johnny Clegg and Savuka-he is South African and it is a nice sound.
Blue Rodeo-They are the biggest band in the history of Canadian music, but so unknown down here. Hard to classify them. Folk,rock, country sound.
Maynard Ferguson-screaming trumpet work on good tunes. His versions of Country Road and Don't Let the Sun Go Down on Me are chilling.
Van Morrison-you probably have this already because he is a legend, but if not....

That video is probably the closest you are going to come for some time. The relationship between John Petrucci and Mike Portnoy isn't the best since Mike left Dream Theater.

They are a concept band that tells the story of comic books (not nerdy superhero ones, sci-if ones) written by the lead singer. Every song/album has it's place in the story line, as well as a special connection to a moment in the lead singer's own life.
Listening to them turned into a hobby of following the story for me, and it is cool to see a band with this many layers. They have songs that range from metal to punk and pop rock. They can be a bit dark in their lyrics, but those lyrics are obviously associated with low points in the story from the comic books.

In that link, if you click the names of the songs in order, it will take you through what is the first portion of the story of "The Amory Wars", as well as inform you of personal connections to the songs themselves.
DISCLAIMER: The title track "The Afterman" has a sad background, yet it was written with a romantic thought in mind by the lead singer when his wife faced a personal tragedy. It hits dem feels. I figure you ladies like all that lovey-dovey stuff.

I feel like I'm in the same boat. I like EVERY type of music except country. If you're in an "emo" mood I recommend anything by Anthony Green

Maynard Ferguson is an outstanding trumpet player, but the trumpet is probably my least favorite instrument to listen to (though Ferguson does tear it up).
I love the Oboe work on the Concerto - it is always amazing to watch and listen to.
I listened to a some Blue Rodeo at your suggestion and you're right - difficult to figure out what their genre is (but isn't that what makes a band interesting?).

I want to thank everyone for all the great suggestions. I've listened to about 1/2 of the suggestions, going to try to catch the rest over the next few days. Some I had heard of, but many I had not and the work is really good stuff.
I'm saving the emo for last - I'm honestly not a big fan of emo.
Listening to Casa Sui right now - reminds of some of the oldies rock bands like Cream or Allman Brothers. Listen carefully, I catch some strong bass riffs.
