I could definitely see a reboot of Saved by the Bell with Screech as the new principal.

I think it would be horrible, but it seems like something Dustin Diamond would jump at the chance to do.

Having a bunch of people in their 30's and early 40's play high school kids might be a bit of a stretch even for hollywood.

Yeah, no need to reboot when you can make your own. We're seeing a bit of a resurgence of the family sitcom right now. They should be looking for something edgy, the 2016 equivalent of Married With Children or The Simpsons.
