I'm on a re-watch right now and started from Episode 1. It doesn't have the same effect this way, but that's ok.

You'd be very surprised. I'm 23 and I know a ton of people that haven't seen any. It makes me feel like a massive nerd but I don't get how they haven't seen a single movie from the biggest movie franchise on the planet. I think they don't like the stigma so they refuse to watch it.

Start with A New Hope. If she digs it, go through the OG Trilogy and straight into Episode 7. Don't even mention the prequels unless she requests to see them. If you start with the prequels, unless she had a childhood crush on Hayden Christenson, she's going to hate them, and assume all of the Star Wars movies must be sucky like the prequels.

This. A lot of people refuse to watch scify and fantasy movies because they're "just nerd stuff". They're afraid that if they watch it, they'll suddenly be laughed at by all of the kids at the cool table and never invited to prom, I guess. They see this huge number of movies and it's kinda overwhelming. It's like they don't think they can watch just one. It's all or nothing, and they don't want to commit that much to just "nerd stuff". They need to catch up on Real Housewives of ________ and their third netflix rewatch of "Gilmore Girls".

Release order. I saw Phantom Menace when I was a kid before seeing the original trilogy. It doesn't make it better.

Introduced my wife about ten years ago before we were married.

Watched in the theatrical release order. My wife actually enjoyed the love story between Padme and Anakin.

This is the only answer.

Forget the "Luke, I am your father" spoiler - what about Yoda? One of the best moments in the entire series is being introduced to this wimpy little green dude in ESB, thinking he's comic relief, and then finding out he's a total Jedi badass.

You find that out when he shows up halfway PM. Totally ruins his entrance in ESB.

Machete Order really is the best way to watch IMO.

A New Hope
Empire Strikes Back
Attack of the Clones
Revenge of the Sith
Return of the Jedi
The Force Awakens

Then show her Rogue One if she's really into them, and Phantom Menace some other time if she's like SUPER into them and demands to see it. Otherwise, Phantom Menace really isn't necessary at all.
