No shot it ends up with one ruler.
More likely we'll end up with an anarchosyndicalist commune. The remaining families will take turns to act as a sort of executive officer for the week.
But all the decision of that officer have to be ratified at a special biweekly meeting, by a simple majority in the case of purely internal affairs but by a two-thirds majority in the case of more pressing matters.
The food in those meetings will be described in an entire book by themsleves that RR Martin has a heart attack before finishing.

I don't know how it will end, but I'd love the last shot of the series to be of an empty Iron Throne, then the camera pans out and we see dead bodies everywhere, dead white walkers and dead dragons, and King's Landings burnt to a crisp like Harrenhal.

I see three main driving forces, ATM. Petyr Baelish - He wants the kingdom to himself. Varys - He seems to want Daenerys to establish the old kingdom. What is interesting is the Starks are split between these two (assuming Bran controls the drags). The field - this has the remaining families. John Snow, King Slayer, the northern army, little finger, etc. So to nutshell, I think the main forces at war will be the old kingdom, the current ruling parties, and the supernatural aspects of the show. Not enough info to know who will come out on top.
