There are several outstanding actors and actresses on the series. My pick is probably Jack Gleeson / King Joffrey. Dude absolutely nailed his part and his character certainly created strong emotions in the audience.

Other candidates:

Charles Dance
Peter Dinklage

Hodor. Did you know IRL he is 5'4" and a former horse jockey? Amazing range.

I didn't know this:

In 2012, Gleeson indicated an intention to retire from acting to pursue an academic career once his work on Game of Thrones was finished.[2] In 2014 Gleeson confirmed he would be permanently retired from acting after concluding his work in Game of Thrones.[10]

Asked why he was retiring by Entertainment Weekly, he replied: "The answer isn’t interesting or long-winded. I’ve been acting since age 8. I just stopped enjoying it as much as I used to.

"And now there’s the prospect of doing it for a living, whereas up until now it was always something I did for recreation with my friends, or in the summer for some fun. I enjoyed it. When you make a living from something, it changes your relationship with it. It’s not like I hate it, it’s just not what I want to do."

He is easily the most accurate book to TV transition. The best actor is probably Dinklage though.

Sean Bean always takes getting killed like a champ.

Best actor probably Dinklage.
Onion Knight is perfect casting as well.

A lot of the acting has been superb. Besides the obligatory Dance or Dinklage, I think Headey has done an outstanding job owning her character.

They're both dead sadly.

The Hound and Charles Dance.

I don't think I've ever hated a single character in tv or movies more than Joffrey, so I guess I'll go with Jack Gleeson

Dinklage
His rant while on trial was about as good as acting as I've ever seen. Go back and watch it and you'll see its hard to beat

Since everyone says Jack Gleason is the nicest kid in the world IRL, I'll have to say that's my pick

He's probably smart to retire and get some other career despite his talent because he will likely always just be Joffery to people, so it's an uphill battle and he could probably always pick it back up after if he wanted to

I just finished rewatching the pilot, and it is crazy how many characters (a lot of them great and importent characters) I ticked off as dead in a given scene:

Ned: dead
Jory: dead
Maester Luwin: dead
Theon: dickless
Catelyn:dead
Bran: crippled
Robb, dude with mutton chops, King Robert, Joffrey..... all dead.

ETA: To answer the original question, there are so many options for the greatest acting job performed on the show. One of my favorites is Alfie Allen as Theon. He's probably had to display more range as an actor than anyone else on this show. His character arc in season 2 remains one of my favorites.

Agree on Gleeson and Dinklage

Headey is probably next.

Truly, the acting and directing on the show is incredible.

Hmmm, this is pretty damn tough.

Actor: I have a very, very hard time picking one between Jack Gleeson (Joffrey), Charles Dance (Tywin), Stephen Dillane (Stannis), and Peter Dinklage (Tyrion). They all have really brought a little something extra to their parts and it's hard for me to really put one over the other. If it was a gun to my head situation I'd probably throw out Charles Dance but it wouldn't be by much at all.

Actress: Lena Headley (Ceresi) and Maisie Williams (Arya)

ETA: I think we'll look back on this show and really note it as one of the best ensemble casts we've seen in a long time.
