Previous seasons mean pretty much nothing. They've tied some of them together with characters, but you won't need to have watched the previous seasons to watch this one. You should however watch the 1st season as it is just wonderful. The rest are kind of meh.

Season 2 is legitimately in an insane asylum 
Season 1 is a good myster/suspense season. Lots of just creepy things happening. Had some legit scary scenes.
I'd say season 1 is definitely the most like a psychological thriller. The other seasons have been much more on the gore/shock horror style. Except Coven. Coven just wasn't horror. frick that season

I'm not holding my breath. Each season has been worse than before (which is typical of Ryan Murphy shows).

After rewatching season 3 (Coven) on Netflix, I realized I was far too harsh on it and it was very enjoyable. Season 4 (Freak Show) was absolutely brilliant and the Halloween episode remains my favorite episode out of all the seasons. I have high hopes for tonight.

Your order is correct. Coven started out ok, but ended up laughably bad.

For sure watch season 1. Great TV. None of the other seasons have come close to season 1. All of us here will watch in hopes that this season will be close to season 1
