Fat shots are mostly caused by not getting through to your left side at impact along with dropping your right shoulder. Try hitting some balls with your right foot (assuming youre right handed) off the ground or with barely any weight on it throughout the swing. This will help you hit the ball more solid and is the idea behind the stack and tilt method...which I do not use or recommend. It is a good practice technique for learning to get your weight to the front side at impact though.

yea thats not good. I think you would do better sticking with one club and not jumping around your back testing out different chips.
while chipping is generically the same, there are two inherent differences among shots:
1) type of shot
2) club used
that may seem like a no-brainer, but many golfers will use a 7 iron to chip and make the same stroke as a 60 degree, or will use one club with the same swing trying to hit different shots.
So, I would recommend chipping with just a 56 or 60 degree wedge for now. Chances are, if you're chipping with a 7 iron, you could probably just putt it. The goal of most chips is to get the ball rolling as soon as possible, so why not use a putter from off the green? Use the 56 degree for pitches and bump and runs, and the 60 degree for out of the bunker and close shots you need to get some height under.
Grooving those two clubs will allow you to experiment a little to solidify a flop or high spinning shot or execute shots with just one club that could be done with 8 others...

My driving is irratic, putting is here and there and a 15 yard chip onto the green? Goes at a right angle as often as it does towards the hole

While I agree with this in most part, I'm not a believer in putting from off the green in most cases. Most fringes and 1ts cuts have a lot more inconsistencies in the flatness which will cause your ball to kick in unpredictable directions. It usually won't really roll thru these areas but more bounce. I feel I have a little more control with the direction off the club face on a chip shot than with the bounces on the longer grass.
That's just my opinion and since I kinda suck at golf, it really means little.

I agree with that
If I want to putt but the fringe is inconsistent, I will chip with a 9 iron to fly over the fringe
I do most of my green side work with a 56 though
I will putt whenever given the opportunity though, as long as there aren't too many bumps or sprinkler heads in the way

Grain matters a lot more when putting through fringe or fairway because grasses at those height have more grain. Always try and take that into account for speed/pace.

Grain is caused by bermuda's (and bentgrass) lateral growth habit. Grain goes with the natural direction of growth (usually downhill towards a water source/drain line).
The higher the grass is mowed, the more the direction of growth will affect ball roll. If you are putting against grain on the fringe, you'll notice a much bigger difference than if you were on the putting surface.
