There are other guys to pick up his slack. If anything the decision for him to miss it is easier than a golf pro making the decision.
The Seahawks aren't guaranteed to lose by him not being there. Can't say that about the golf pro.

How? He just resigned for a nice payday, and he'll be paid regardless. He won't lose any sponsors by missing the game for this reason. So how exactly are they better off?

Maybe if I was actually in that situation it'd be different but no way id miss the Super Bowl. I'd feel like i let my whole team down.

If Phil leaves the US open, it would be a closer analogy. But I still think it is easier to leave as a top golfer than football player than as a golfer.

He signed a $70 million contract and is the highest paid player and leader of the team. They paid him that to win a Super Bowl.
Also, it really shouldn't be much of an issue if she traveled to Arizona. Childbirth really isn't that predictable either. The doctor could say 4 hours and it could be 15 hours.
