Ways to make extra money during the summer?

For 8 weeks during the summer I work from 8-12 on Monday and Wednesday, and 8-10 on Tuesday and Thursday, and off on Friday.. What would be a good little side gig to earn extra money?

Depends on your resources, skills, and location.
You could be an Uber driver, maybe pick up some waiter shifts at a restaurant, some farms need seasonal labor in the summer, etc.

Golf course/baseball field work. Manual labor without all the PPE/safety requirements of working at a plant.

If you like/have a past in baseball umpiring is the way to go. I used to do it during the day on weekends at the beginning of college. It was nothing for me to umpire 3 games @ 40/hr. Then I'd go home, shower, and work my shift at the bar from 7p-2a.
There were some Fridays and Saturdays that I made 400-500 in one day from umping games all day and having a great shift at night.
Of course when that I happened I would be the a-hole at the bar on a Tuesday with a $300 tab. If only I could be that young and dumb again.
