It was on satellite radio. Yes. Bonfire was spell corrected for whatever reason.

The next interview was Bianco. They had >30k actual attendance last weekend.

I'm from St. James Parish and people around here do make it all the time. Really the only place I've seen it. Check out John Folse's recipe on his website, that's pretty much the gist of it. Even better if you use leftover homemade red beans.

I won't pretend to know the Poche recipe. I make it the lazy way.

Make a small roux.
Cook Veron sausage and some andouille in roux once dark.
Add onions bell peppers and celery.
Cook all that down a bit and add a few cans of Blue Runner beans.
Then add a couple cans of chicken broth until soupy. Should be just a little bit thicker than regular gumbo.
Add cayenne and black pepper to taste.
