I don't know how to explain it exactly, I mean, I'm still sitting here with his stream on in the background.
I guess the big thing is, is he is ALWAYS jungle, it's like he knows no other role. He's always the one carrying people, doesn't matter that the jinx on your team has more kills and less deaths, NB3 is of course still the one carrying them. He was doing a challenge for himself, and when things got to tough he chickened out and gave up, crying about it the whole time.
He's like those annoying players you always get stuck with, and even though he makes a really really bad and stupid move that gets himself killed "ok guys, top has flash and ult down" - ok we just saw you get yourself ganked by your bad gank...
I don't know, watching players like sky has made me a little more critical of certain players that just kinda spearhead themselves into 1 specific role. (also not a huge fan of imaqtpie either because he always seems to play ad carry)
ETA: and I'll say this, the reason the spearhead role streamer bugs me... is because after a nightblue stream I get on League at night and there is always some idiot trying to jungle with something NB3 showed them that day... YOU ARE NOT NB3, STOP TROLLING US

Most streamers and pros play a single and occasionally a secondary role. trick only jungles and occasionally will top or voli support. And he only plays like 3 champs Udyr voli and nasus. Other streamers play exclusively one champ.
You don't get really good, like good to the point where other people will watch you on stream, by playing different roles all the time. They are as good as they are because all they do is play one way and try to perfect it.
He plays jungle because he's really good at it. Also, because that's why people follow his stream, they watch to try and learn from him.

Basically This
He is always jungle, because he mains jungle. It is what he is best at, and the reason he is a challenger player. If he played mid lane every game.. he would probably be mid diamond tier. He doesn't play other roles at a challenger level. He mainly plays carry junglers (Vi, Wukong, Pantheon, Khazix, Jarvan), but this has changed recently with the meta.
and yes, he makes mistakes. But he must make a lot of good plays and help his team win/carry his team way more often since he is playing in the challenger division and a top 200 player (#1 player in NA in S3 for a short period of time) in North America.
And to comment on people trying what they see done on his stream. You can't control what other people do, and you certainly shouldn't expect people to perform at the same level as him.
imaqtpie was the ADC for Dignitas last season. It is his best role. although he is actually very good on other roles/champions.
People that play league have "main" roles. It is one of the most proven was to get better at the game. Play one lane/and 2-3 champs really well. And you will win more of the games you play.

So what you guys are saying, is if I continue on my path as a support... I should be watching Aphromoo's stream a good bit to gain pointers and tips?
It just feels like if I do this I'm setting myself up for disappointment, because I will never be at their level

Thats a good reason why some plat/gold level streamers with only 100 ish viewers are worth a watch.
They also will answer questions more often if only 50 ppl are watching vs 15,000. Plus they try to be really informative.
Don't pigeon hole yourself into support though while leveling. Play top and mid and learn how to lane solo. It's great fun and really important to learn.

There are plenty of diamond/challenger level streamers that only have a couple hundred viewers to learn from.
AnnieBot - Mid/Support - challenger (only plays annie for the most part)
I Am Matlife - Support - challenger
Geranimo - ADC ex-challenger, don't think he has made it back into challenger
Hashinshin - Top (really a salty person, but interacts well with chat) challenger or master tier
There are other.. just can't think on the top of my head.
eta.. you don't learn anything other than relationship advice when watching sky..

Maining support is a labor of love. Supports can only do so much in a game. Other lanes can carry a game, supports often can't. I mostly play sup/jg in soloQ. it also good because in ranked draft, you will not always get your preferred role. You will have to fill into other roles based on team need. So you should have a few main roles and at least occasionally practice the roles you don't play.
So you should learn another role.
