You know the area on the other side of the door where the troll is? If you go the opposite side of to where the caged dog drop down is, you'll find a ladder. Talk to the window right before the ladder

You don't ever have to fight the werewolves on the bridge. You can open the shortcut to the first boss and then take it to fight him, you come out on the other side of the werewolves.
Edit: The notes you see on the ground telling you to use fire are notes for the boss.

This is my first Souls type game but I love that you can max out all your stats, think I might be playing this for a while.

There is a wooden platform with two ladders, one long one up and a short one down. The one going down leads to a group of crawlers.
If you climb up the long ladder, you'll come to an area with a bunch of crows then you cross a bridge and there is a troll with a big wooden weapon. Kill him and then climb up the ladder right next to him.
You'll see a red lantern next to a window. Talk at the window to a little girl and she'll give you the music box.

you have to beat the werewolves at least once to get to the shortcut to open it
and there are notes on the ground before the werewolves saying to use fire on them
eta I guess you could run by the werewolves to get to the shortcut and open it before they kill you

I don't think this is true. I opened up all gates to Yharnam lantern without fighting them, specifically the boss shortcut.

If you mean run by them as in right through them while avoiding getting attacked, I don't think you even need to do that.
