I know, I should be making it myself without the boxed mix. But the wife came home with some from the store yesterday. Is it any good, or can I add to it to make something edible?

Add your own mix of sauteed trinity veggies, and add a bit of chicken liverage to the browned meat mixture.

If I use mix, I hate Zatarain's more than any of the others

I like Louisiana or Oak Grove.

I toss it in my rice cooker with some chopped up Andouille or any cooked pork or chicken meat and press the start button.

I also found that I prefer their new "spicy" jambalaya to the original.

Add sausage and shrimp but first sear the shrimp in a little liquid crab boil first.

Not much you can do. It tastes like jambalaya made by someone who has never tasted jambalaya. Drown it in chicken stock instead of water and add as much sausage as you can to make it palatable.

We saute the trinty, stir in the the Zat's and add chicken broth, shrimp & sausage. We do this at home and at tailgates. It is pretty good stuff!

I make the Tony Chachere's Jambalaya.

Tastes fine to me, I use some cut-up Manda sausage.

Ok, so I started by browning a pound of breakfast sausage, then added 2 pounds of smoked sausage, then an onion. Then I added a cup of uncooked white rice, then the two boxes of the Zatarains mix. Added water and let it cook. Turned out decent, though I would have liked it with a little more bite, though the wife and kids dont so my loss. Overall it worked. Thanks for the suggestions.

I boil four chicken thighs and add the water from the boil instead of tap water. I also add a pound of boiled sausage in addition to the chicken.

Please tell me you did not get the "cheesy jambalaya" that zats puts out

Hells no. Just the original or spicy mix. ISTR seeing the cheesy mix and being puzzled by it, as in, "That's a strange thing to do." No interest in trying it, though.

I make that stuff

ETA: Something that helps with those mixes is using some fresh onions. The dehydrated onions used in the mix don't give the same flavor as fresh onions.
