Any tips on incorporating tomatoes (canned, fresh, just sauce or paste)? I'm making a Jambalaya from scratch on Saturday for the first time in a while. I was raised on Cajun style chicken and sausage jambalaya, but was thinking about (committing a sacrilege)trying something a little different.

If it makes any difference, I'll be serving it to my Yankee wife and her family, so any failed experiments won't really be noticed.

TIA.

I had a box of the orange Zatarain's the other day. It didn't hurt my feelings.

I did say sausage.

I meant it more as an alternative designation vis-a-vis creole style (i.e., with tomatoes).

Nothing wrong with some good red jambalaya with shrimp and sausage. Maybe it isn't true "jambalaya" but the shite is still good.

I've had jambalaya with rotel in it before and I liked it. Don't let the jambalaya elitists dissuade you.

Every festival I go to around New Orleans serves tomato jambalaya. Some are good, but there have been some that were just horrible.
I don't mind it if it's cooked right, but if I'm entertaining guests and jambalaya is on the menu, then I'm cooking pork/sausage jambalaya 100% of the time.
