He had his shtick and did well with it - all props for that. That being said, the accent is beyond horrendous.

It was the heyday of public TV - Justin Wilson, The Secret City, A Reading Rainbow, Bob Ross, etc.

Great shows. He introduced many people to a taste of South La culture.

Watched his program many times.

One of my favorite quotes from him came at the end of the show when he was sitting down at the table, about to eat a fish dish he cooked. He held up a glass of red wine and said " y'all mighta noticed I'm drinking red wine wit dis fish instead of white. Well dat fish don't know and don't care what color dis wine is".

I remember watching him on Alabama PBS on Saturday afternoon from time to time. Seemed like every damn dish had Paprika and Cayenne Pepper.

He was a really nice fellow as well. When I was a kid back in the 70's he used to hang around the Marina in Madisonville on a friend's boat. He would always talk and joke with all the kids around him and take the time to entertain.

I met him one time when I was a youngster and he asked me what I thought was the bravest animal on the planet... After some thought I said the tiger!!! He was like nope - it's the crawfish ... Looking at the confused look in my face, he explained that if a tiger (or any other animal) were on a set of railroad tracks and a train was a approaching - they would run away ... But not a crawfish !!! A crawfish would just sit there with his claws up trying to stop that train

I loved his damn show, I think I was around 10 and just finished watching him make red beans and rice
was thinking "hell I can make that"

damn near burned down the house trying to cook the rice on the stove and mom was pissed for a week

bean were spot on, rice not so much....
