Where in Lafayette can I buy good Spanish chorizo to make a paella?

They're on different ends of the spectrum, but either La Morenita or Whole Foods.
Shoot, they sell chorizo at Albertson's and Winn Dixie.

Spainish chorizo (which you would want for paella) =/= Mexican chorizo

Yea you can get cacique chorizo anywhere, but it's Mexican. Some places with bigger delis might have Spanish stuff with their salami. Not sure if whole foods does or not.

Is Chorizo absolutely essential to the paella?

I only ask because I usually just use some thin sliced ham (prosciutto or jamon) if I need that pork kick. I would worry the chorizo would overpower the end result of the dish with its saffron.

Sorry I wasnt clear. What I meant is saffron has a very distinct and necessary flavor to paella. Adding something like chorizo, in my estimation, would fight with that saffron flavor.

Gotcha. Chorizo isn't a traditional ingredient, but it's become popular lately. Just google paella recipe and you'll see 20 chicken and chorizo paella links. I just prefer seafood though.

Yeah, I'm looking for Spanish chorizo. My grandma always made it with chorizo and I never found it to conflict with the saffron, as one poster suggested.

Side note: saffron is so ridiculously expensive.

I use dried chorizo and saffron, it's lovely. Whole Foods carries a Spanish style sausage---not precisely a true chorizo, but it's heavy on the paprika/pimenton/dried chile. It's a dry cured sausage, usually in buns near the wine and cheese. Can't recall the brand, Olli? maybe?

If there are 20 chicken and chorizo paella links on the internet, it tells me this. Some Chorizo company sent out a recipe to about 5000 Food bloggers looking for them to write about a "new twist on paella." Some took the bait and then a few others are cribbing recipes from the original bloggers and writing about an "authentic paella recipe". And so on and so forth.

I like a seafood paella as well, but a mushroom and chicken thigh is a great one to have in the back pocket as well.

Yeah, my family is from Spain so I grew up eating a lot of paella. I like both seafood and chicken/chorizo paella. My grandma (who lived with us my whole life) and mom always made it with chicken and sausage, so I'm going to try my hand at it.

Try calling around at some specialty delis if y'all have any. It's most likely going to be with salami and other cured meats.

My deli sells some but it's all sliced thin, not links.

That may be true but I grew up eating it, and I can tell you it is "buenisimo"!

I'd think any dried, spicy sausage would work. Look for a Columbus brand sausage at your grocer's deli aisle. Its decent stuff and good in cooking application such as this.

You can probably find higher quality stuff on the internet or at a specialty food store (such as Fra Mani). But I am not certain you need the highest quality chorizo money can buy for this application.
