My parents were both small town, so they’d eat stuff like buttermilk and cornbread, pickled pigs feet, and cottage cheese. All of which still turns my stomach.

Turnip greens & cooked cabbage. Mom never made them growing up, but I made greens for my wife once because her grandmother used to make them, and they are delicious. Still not big on collards, and I tried them at an AA owned meat and 3 restaurant. I figured that’s as good as they’re going to get, and I still didn’t like them.

Spinach. My mom always worked the Popeye angle to get me to eat it, but I wouldn't. I like it now.

My list is too long.

My Daddy liked to make mustard greens a lot. I couldn't stand the smell and would go outside or to a friend's house. Now, I find the aroma enticing!

I loved spinach, but hated mustard greens, turnip greens, and most especially turnips. My dislike for turnips still exists.

Egg salad sandwiches. Something about the texture and smell just turns me off. Still cannot abide them, and I eat almost everything else.

People didn’t know how to cook Brussels back in the day. They were mushy and no flavor. Now you sauté them in bacon or pancetta and they are amazing

Liver. Any and all liver. When I was a kid and my mom would cook it, if I asked "what's this?" She'd just say "beef". The trauma of 5 or 6 year old me thinking that was a little smothered steak in gravy and onions only to tuck in and realize what it was .....

Vegetable Soup. Mom liked to make it and we hated it. Although normally easy going, on one occasion the parents made us finish a bowl, leading to a dramatic affair of us choking down the soup with tea just to put down enough to pass review.

Many years later at LSU, came back to the frat house for lunch and it was vegetable soup. Smelled good. Ate plenty. Called mom and said you were right. Again.
