What’s Your Best Chili Recipe?

My wife (no pics) asked me to make chili due to the poor weather. I have a pretty simple recipe.
Brown 3 lbs of ground beef
Sauté 1 onion
Drain Fat
Add 2 Cans of Creole Style Blue Runner Beans
1 can Tomato Paste
1 can diced tomatoes
2 cups water
Lots of Chili Powder
It’s a simple recipe that hits the spot, but what do you do to make it your special recipe?

2 cups water

• 4 slices thick cut bacon
• 4 lb beef brisket flat cut into 1/2" cubes
• Your favorite beef seasoning
• 1 large white onion, diced
• 5 garlic cloves, pressed
• 1 Tbsp paprika
• 1 Tbsp cumin powder
• 3 ½ Tbsp Texas chili powder
• ½ tsp dried thyme
• ½ tsp chipotle chile powder
• 1-2 chipotles in adobo w/ sauce
• ½ quart beef broth
• ½ cup strong black coffee or coffee stout (I use Parish Reve)
• 28 oz. can whole (or diced) tomatoes, in juice
Dice bacon and cook in dutch oven until soft, then remove.
Season brisket cubes and sear in bacon grease. Do this in batches for a good sear.
Caramelize onion in bacon/brisket grease, adding garlic later.
Add seasonings, then bacon and brisket, followed by remaining ingredients.
Bring to boil, then let simmer for 2-4 hours. The longer you simmer, the better the chili is.
Top with shredded cheese, cilantro, and onions.

the key to good chili is the chili powder. if its a generic chili powder you use get a better powder

I don't use a recipe and it is different every time. Today's quick version is:
Ground beef
Onion, bellpepper,garlic
Crushed tomatoes and tomato sauce
Chili powder,cumin, adobo
Black beans (was out of pinto)

As in red beans? Seems strange.
Dark red kidney beans if you're gonna use beans.
