they could sell the shite out of some Pho, Bahn Mi sandwiches, sliders, and tacos.
I'd probably eat there 3 times a week at least considering it's not expensive
Drunken Fish now does Vietnamese food. It's pretty good too, the Bahn Mi is a really good lunch deal. I think it's like $5.50

Is BR the biggest city in the US without one?
It's crazy.
Mind boggling. It would absolutely clean up.

If I had the investors, I'd open a Dave and Busters in the spot next to Hooters and where Fox and Hound used to be. It's a giant open vacant space right now and it's for sale. It would be the perfect location and would make a killing.

students rarely cross to the north side of I-10. i wouldn't consider that really "near campus"

Terrible is a stretch. It's not the end all be all of Vietnamese restaurants, but it's decent and cheap. Might not be what you're looking for, but for broke college kids it's a solid option.

If I was rich, I would start my own Indian/Middle eastern/Lebanese and ethopian place. I'd make a killing.
There are several Middle Eastern/Lebanese places around campus and one Ethiopian place on Highland just north of campus. An Indian restaurant would be pretty profitable, I would imagine.
I would open a Jambalaya Shoppe franchise (or something similar) and have it open for lunch, dunner, and late at night. Believe it or not, it's the perfect food to eat to help sober up. It has delicious meat, enough grease to kill the hangover, and ample carbs to absorb the alcohol. It also keeps its heat well for long periods.

cheapest chain food you could find. As close to the dorms as you could get it.

that does sound good but for 18-25 year olds, probably an upscale sandwich/soup/salad place with a good ambience would do better IMO

STOP. THE. PRESSES.
I quote from this 2013 interview of the new FRG CEO Tim Taft:

If you look at our map ... most of our Taco stores are in Texas. We are moving the Taco concept east
Rouge, you can take Baton Rouge; I'll take Birmingham. Just need to find a few spare billion laying around in order to pay the franchise fee.
