Sauces... specifically sauces that enhance a dish.

High roller perks

Phillip M's was always good for a steak. A long time back, they had a hibachi grill place that we liked. It folded. What a shame. I'm a sucker for fried rice and guys who can catch a shrimp tail in their cowboy hat.

Dancing Rabbit is a really good golf course. Should be nice playing temp this weekend.

Phillip M's for a steak is how I'd spend my restaurant voucher.

They have a waterpark if you have kids. Little else to do over there.

No kids, might go to the water park anyway.

Risotto. I've never even eaten it, though. Probably should try that, first.

Slow roast some salmon and make a pasta side. You could roast some cherry tomatoes and make a cream sauce from those over a pasta that she likes. Maybe asparagus as a side, pan sauteed.

ETA: I don't necessarily think that "tests your skills" but it would be a good meal.

Look at the recipe I posted in the crabmeat thread if you access to jumbo lump crabmeat (fresh not frozen or pasteurized).

The water park had a Hard Rock Café when it first opened. That folded, too. Not sure what is over there in the hard rock location now.

Not really as difficult as people imagine. It just takes your full attention for a while. When done correctly, it is

Now a good mole sauce might be a little more of a challenge. Lots of ingredients.

Unless you know exactly what you want flavor wise, I'd just buy it. McCormick is good and easy.

I'm going to braise some short ribs this weekend, which I've never done before. It shouldn't be too challenging, though, right?

Egg Drop Soup.....I dare you. I'm a pretty good cook if I may say so but I've tried over 10 times and it's my nemesis.

If you get it right I will rename it "More Beer Please Soup" and order it that way in restaurants.

I have a mole recipe that I have been saving for a rainy day to try. It definitely looks like it will be a labor of love, which is fine, because I love a good mole. I've just never made it myself.

If I wanted to challenge myself, it would be in the baking arena. I can cook up a storm, but I've never baked anything that didn't come out of a box. I like to improvise as I go, which to my knowledge is a little difficult with baking.
