I don't know that I could put too many flavors on fresh specs. They're delicate to me.

Fried shark if what's supposed to be used.

I've used pan fried catfish and they came out good.

I just get whatever's fresh at the store. This usually ends up being tilapia or farm-raised catfish. I'm putting it into tacos with other flavors, not necessarily going after highlighting the flavor of the fish itself. This is going to be a healthy and delicious Ash Wednesday meal for us...
