Get a good bone in ribeye.
Do you have a grill that's gonna get white hot?
You could also put a heavy flat skillet on the grill if you don't wanna smoke up your beautiful new kitchen.
A thick cut is pretty important. I'd go 250° for an hour, then scald with fire. Then apply butter and pepper.
ETA: Then, I'd eat. Y'all gotta split a big steak

I don't (know how to) use the grill, that's my husband's domain, so I want to do this in the house. I have a new range hood, after all! That should be able to handle some smoke.
