You must make your sauce/toppings separate from the corn, yes?
I like that idea.
I slather the entire corn with mayo immediately from the grill and then go inside and sprinkle chili powder, lime juice, and cotija on it.

i usually just eat ribs at the rendevous, watch the ducks march at the peabody and then go check into the motel 6 on brooks road,, with my weapons..

Was to be celebration of last trip to Memphis for awhile. Followed through with plans even tho eye Dr. said no , be back in 2 weeks for 6h surgery on rt. eye in 8 months and then hopefully it will be worth keeping.

Here's my method:
Peel back husks and rub corn with butter, salt and pepper. Roll husks back up, tie off, bake @ 350 for 30 minutes.
Combine in a bowl 1/4 cup mayo, 1/4 cup mexican crema, 1/2 cup feta, 1 clove minced garlic, chopped cilantro, chili powder to taste.
Take corn out of oven, discard husks, slather with sauce.

Never thought to bake them. Hmm. Could be a good alternative when I'm craving it but not using the grill that night.
