Damn son.....getting it started a little early today.

Ill be having leftover chicken roban that the wife made Sunday............This is one of a handful of dishes that she can make successfully...............and it is fantastic.

I have some pork marinating at home. Cubed up some pork chops and am trying Penzey's Italian dressing seasoning to which I added olive oil and rice wine vinegar (I couldn't find the white vinegar) for the marinade. I kind of don't know what I'm doing, but we'll see.

I also have some butternut squash and some Brussels sprouts, which I will probably roast.

Pork Carnitas. The wife put the pork in the crockpot around lunch with all kinds of stuff including some cirtrus (lime, orange). Pull them out later, break it into peices, and throw them in the hot cast iron and the cirtus chars up nice and sweet. Add onions from the crockpot....yum.

I just had leftover pot roast. Those near burnt carrots and potatoes are great.
Lucy will have chicken salad sammich when she wakes up at 6 pm. Which means I have to make a new batch tomorrow.
Dogs had dry dog food topped with the last of leftover gumbo as a gravy. They said it was excellent.

Spaghetti with mushrooms, spinach and veggies over spaghetti squash. Probably will throw some avocado on top.
