West Indies Salad Recipes Needed

West Indies Crab salad?

Ingredients
1 lbs Lump crabmeat
2 small Jalapeños, minced
1/4 cup Tomatoes, diced
1/4 cup Red peppers, chopped
1/4 cup Red onions, chopped
1/4 cup Celery, chopped
3 cloves Fresh garlic, minced
4 oz Lime juice (bottled)
4 oz Cider vinegar
4 oz Salad oil
4 oz Ice water
1 tbsp Cilantro, chopped
1 tbsp Kosher salt
1 tbsp Black pepper, ground up
Hot Sauce, to taste

Directions
Place onions, jalapenos, celery, red peppers, tomatoes and crabmeat into a mixing bowl. 

In a separate mixing bowl, add lime juice, vinegar, hot sauce, cilantro, salt and pepper, and whisk together while slowly adding the salad oil. Next, add in the strained ice water. Pour the mixture over the crabmeat and vegetables and mix well, but careful not to break up the crabmeat.

Dip can be served immediately, but for best results, cover and let sit in the fridge overnight

Keep it simple, I prefer it with white vinegar over apple cider vinegar, but this is the original

Yep, I think that's the one I'll use. First had it 32 years ago, made by some Mobile family on Mrs. O's side. Best I ever had. I expect their recipe was close to this.

That's the recipe I use except I use rice vinegar.

Yes, the simple recipe is great. I use apple cider vinegar. Make it often in warm months. Delicious.

WIS , proper, isn't a ceviche. I think his recipe is.... you could sub cardboard for crab in that recipe and save money, and it'd be good.

This mixture somehow goes with fresh crabmeat in a delicious way. Compliments it without overpowering it. Try a sweet onion instead of white or yellow. I prefer the sweet with it.

Makes a terrific salad plate.

And onion, and you have to follow the directions like it says. It all melds together. I thought it didn't sound like much either, but it's become a staple on beach trips.

similar, but the crabmeat is already fully steamed when you buy it
