Walmart has their choice rib racks on sale again for the holidays.*ETA with pics

Every year they do the rib racks, some bone in, some boneless. They are wrapped in a "festive" plastic. Anyway, I usually get a couple every year cause I love prime rib, and they are great cut into steaks, and typically, being a high quality choice, they are as good as you can get without buying prime.
They are $6.97 a pound for bone in and $7.97 boneless, which is a pretty good price for Choice ribeye racks. Just wanted to give a heads up. They are the best meat Walmart sells and I can only find them around Christmas.

No. these are special sales for the holidays. It isn't their typical meat that you would normally find. It's cryopacked meat, typically smaller roasts, but you can find bigger. I've always been very pleased with the quality of these. And they normally seem to be much higher grade than what you would normally find at sams or Walmart.

Well, I put it on the smoker last night. I dry brined it for about 3 hours on the counter. Then seasoned with kosher salt, black pepper, garlic, and a touch of rosemary, and a bit of sage. Put in the smoker at 200 degrees for 4 hours until internal made it to 118. Only put smoke on it for about 30 minutes. Wanted more beef flavor than smoke flavor. Here it is resting.
I heated the oven to 550, and in it went to get a crust. Sorry, I forgot to get a pic after it came out. But here it is cut up.
It was absolutely amazing, and as tender as any prime ribeye I've ever had. Great flavor, absolutely zero gristle. The cut up picture makes it look redder in the middle, and greyer on the edges than it actually was.
Couple notes...while resting (about 20 minutes), the internal temp went up from 118 to 122. At around the 20 minute mark, it went down to 121. Placed in the oven at 550 for around 15 minutes, and the internal temp dropped another degree to 120 while in. Rested it for 10 minutes before slicing. It was a 6.27 pound roast.

You're right, but the blue and red "USDA choice" sticker on it does.
But when looking over it again, I didn't see the CAB sticker on it that I thought was on there earlier. I'll update the OP to reflect that. But it is, indeed choice, and a good grade of choice, at that. They always have been and why I put this up.

Thanks for the heads up. Went to my local walmarks and found a 7.87 lb for $38.40. Yep $38.40. It was to be $54.85 but that had it marked down $16.45. Not sure why doesn't need to be frozen until 1/11/17

I'm going look after work. Never cooked one before but I wouldn't be too upset if I messed it up and it was only $35

Just cut it up as steaks if nothing else. It's a pretty decent price for choice ribeyes. And it's really good quality choice. I'm eating leftovers right now. Still good.

So I saw this thread and decided a rib roast was the way to go for Christmas. Went shopping and sure enough a nice bone in rib roast at Walmart @6.97 a pound. Walmart's open 24 hours and I had to go to Albertson's right by there anyway so I checked out Albertson's first....boneless cross rib roast is 3.99 a pound.

Yeah that's pretty good for a cross rib roast. But you do know that a rib roast and a cross rib roast are totally different pieces of meat taken from different parts of the animal, right? It's not actually taken from the rib area.
ETA: I have had a cross rib roast that was cooked wonderfully and was tender and juicy and very good. But I've seen about a dozen that were like eating an old shoe when cooked to the same temp as a rib roast.
But it is a great piece of meat for pot roast.

I'm clueless as to what I'm looking for. Can you post a pic of it still packaged? Going to go run by the local walmart to see if I can pick one up.

They come in a white wrapper with I think blue or green and red marking on it. Im not home, if so i'd post a picture.
