Venison sausage question

I've only ever smoked my venison sausage. Anyone ever made them/eaten them not smoked? If so, how were they?

I was just the opposite till about 2-3 years ago.

I like it better fresh than smoked.

Rabideauxs in Iowa will make your sausage and most commonly they smoke it, but if you ask for it green, they won't smoke it. Makes excellent rice and gravy. BBQs well also

I make breakfast sausage with ground turkey, pork, and venison.
I don't smoke it.
It's edible.

I get 1/2 smoked link and 1/2 ground breakfast sausage done out of 1 deer yearly. I like fresh sausage links but ground breakfast sausage is awesome. My processor adds molasses and red pepper flakes to it. Sweet/hot sausage patties are exceptionally good.

One of my best friends moved to Brunswick right after we graduated HS. I enjoyed my visits there, it's a like Coastal Louisiana.
