Wish I had time today but I have some nice carcasses.

Any good recipes?
Also, I think I might have to wait a while to make it. I wanted to do it as leftovers but everyone wanted tetrazzini but me. Will do gumbo in a few weeks. Hope it's still good after being frozen.

How long do you boil to make stock? We make chicken stock in crockpot, but we let it go 24 hrs

Mine will simmer until lunch when I'm ready to start putting it all together

I started making the stock yesterday but I got drunk and passed out around 7. Will have to finish it today

Nice, may do that too this year. It's hard to beat a good pot of white beans

I like 12 hours because I get nervous leaving things on overnight. I also smash the bones up ahead of time though, so that might speed up the process.

I saved a large smoked turkey carcus. Can anyone give a quick recommendation for the gumbo stock.
I was planning on roasting some onions/ carrots and celery n the oven. Then adding those and the carcus to cold water. then bring to a boil and simmer for hours. Am i on the right track here?

Yes you are. You can also brown the bones with the aromatics.

I have a few pounds of turkey left over, should I just dump all of it in there or how many pounds turkey to andouille ratio should I use?

Same amount of chicken you would normally use in a gumbo
