Boiling my carcasses and making turkey stock now, hopefully have some pictures later

Any good recipes?

Also, I think I might have to wait a while to make it. I wanted to do it as leftovers but everyone wanted tetrazzini but me. Will do gumbo in a few weeks. Hope it's still good after being frozen.

How long do you boil to make stock? We make chicken stock in crockpot, but we let it go 24 hrs

I started making the stock yesterday but I got drunk and passed out around 7. Will have to finish it today

I like 12 hours because I get nervous leaving things on overnight. I also smash the bones up ahead of time though, so that might speed up the process.

I saved a large smoked turkey carcus. Can anyone give a quick recommendation for the gumbo stock.
I was planning on roasting some onions/ carrots and celery n the oven. Then adding those and the carcus to cold water. then bring to a boil and simmer for hours. Am i on the right track here?

Yes you are. You can also brown the bones with the aromatics.

I have a few pounds of turkey left over, should I just dump all of it in there or how many pounds turkey to andouille ratio should I use?
