To me, black beans are the most underrated side dish around

Man, those things are good. The only problem that I have with them is that they have too many empty carbs. A whopping 116g per cup with only 29g of that being fiber and 3g being sugar. That is a lot of empty carbs. They do have 39g of protein though. I still love them and just eat them sparingly and never finish all of them.

Who in the hell underrated fried okra? Outside the south maybe, but fried okra is a staple to any Sunday dinner round these parts

No. They are packed full of nutrients and the carbs you're referring too are complex carbs. Not too mention packed with protein like you said. Empty carbs are sodas, donuts, chips, etc.

empty wasn't the correct word, you're right. Your body still will store those excess carbs as fat if they aren't being burned. That is my concern

They are not "empty carbs" because of the high amounts of protein and fiber they contain. A balanced diet tries to limit substances such as sugar and carbs, but increase fiber, protein, etc. You have to look at the total picture.

I find cornbread dressing with gravy to be underrated. Very seldom do I see it offered.

Not always true, as legumes are full of resistant starch, which does not react with the body like normal starch. It actually just passes right through.

Black beans are considered to be one of the healthiest foods there is. Read through this article and your concerns should be alleviated.

Just an FYI... Those numbers are for dried, uncooked beans. A cup of cooked black beans will be closer to 1/3 of all those numbers.

I'd rather field peas myself, same earthy flavor, but creamer, less chalky. Black beans are served with every semi-southwestern dish out there, but you rarely find field peas.

Have you tried the received black beans in a can? They are delicious. You dont have to add one thing to them. I get la costena brand

Our cute Mexican waitress yesterday offered choice of retried, pinto, or black beans. She gave a little smile and nod when she offered the black beans, so we went with that. She was right; they were great.

In the last six months I've eaten more black beans than the rest of my life, and I'm very content with that. Black beans are excellent.
