Well, yeah. You know there's a guide on how to store food, how often to clean items, that sort of stuff. And you know there's a manager making sure the shake machine is getting cleaned at the end of Wednesday's shift or whatever. Shoot, you can probably lose your franchise if you get dinged too bad by the health department.

They tend to do their own audits. I have mine Wednesday morning. I've always thought that smart mom and pop restaurants would try to use some of the structure of a chain restaurant

I bet it wouldn't take much work to find the guide on how to run a Chili's or something and just rip the it off whole hog. You can't tell me that like a 1995 franchise manual didn't get scanned and posted on the internet. Or shite, manuals that belong to chains that went out of business.
