Thanksgiving Day Menu

Trying to plan for a group of 20 something. This is an all day event with my family. I need the traditional dishes and like to try new things, maybe dessert or vegetable dish. What are you doing?

Appetizers:
Stuffed celery,
Deviled eggs,
Baked Brie w/blackberry jam and crackers

Soup - Seafood Gumbo

Fried and Baked Turkey
Baked Ham
Corn Bread Dressing
Mashed Garlic Potatoes
Sweet Potato Casserole
Macaroni and Cheese
Smothered Green Beans
Corn on Cob
Petit Pois Peas
---Would love to substitute Roasted Asparagus here instead of corn and peas. But family is very traditional.
Cranberry Sauce from the can, I love the Ocean Spray stuff over the fresh made sauce.
Turkey Gravy and Rolls

Desserts:
- Pumpkin Pie w/ Whipped topping
- Ambrosia Salad
- Banana Pudding (Was considering doing a Banana's Fosters upside down cake instead)
- Chocolate or Coconut Cake

Family members help with some of these dishes and everyone carries food out at the end of the day.

How do you do Thanksgiving Dinner and what is your menu going to look like?

I lay off appetizers. Maybe just better cheddar and drinks. Sam Sifton has a great take on why he doesnt serve appetizers and it goes something like this, "You are going to spend days cooking for your family, and then everyone is going to fill up on chips and salsa." Instead he just serves raw oysters.

Other thing I like to do to lighten the fare is serve vegetables as colder salad type dishes. So brussels sprouts get turned into a shaved salad/slaw, corn is grilled and then tossed with sliced shallots and thin slices of red pepper in a lime dressing, etc...

What a line-up

I was about to ask how much help you get making all that. Sounds like a weeks worth'a cooking. I need to figure out what I will be making. Probably the main dish and a few sides - nothing extreme.

All we have planned out right now is my dad is doing a rotisserie turkey and I am smoking a ham, my wife and mom will get together and discuss all the sides I assume.

Thanksgiving is the low key holiday for us, usually just a small gathering.

2 weeks prep is already planned. I am making the gumbo and baking the turkey plus some of the other sides (corn bread dressing and sweet potato casserole.
I'll will make the cakes and pie too.

Also, would like to lighten up on with the vegetables so may create a lighter salad with a good mix of veggies

NO - Turkey is baked day of....Will be making some of the casseroles and freezing. Probably the corn bread dressing and sweet potato casserole.

Whatever they are selling at the Fairgrounds. Just reserved 2 sections in the club.

The traditional stuffing for our celery is cream cheese mixed with chopped black olives. We only do this at Thanksgiving. My father from Chicago, rest his soul, loved this.

you could make a cold Quinoa veggie salad. I think Darla may have a recipe but could be mistaken.

Never thought about making ahead and freezing. I'm still a cooking noob.

OMG. would love with a martini. I may make a blackberry rum punch too. I saw a recipe for this drink and it looks divine. I've already committed to so much, why not add this?

That Fairgounds meal is pretty damned good from what I have heard over many years (it is kind o like Churchill Downs for the Derby). The restaurants in the hotels and the free standing ones are equally fantastic for the meal, just pricey as frick per person.

Turkey (biggest he can find)
Gravy
Rotisserie ham on grill
Mashed potatoes
Dirty Rice
Cornbread Dressing
Bread Dressing (in turkey)
Bread Dressing (no turkey)
Oyster Dressing
Sweet Potatoes
Cranberry Sauce
Homemade rolls
Stuffed Mushrooms

One year my cousin made artichoke casserole/dressing... WOW, so good.

Usually a few pies - pumpkin, apple, etc.

2 different salads (english pea & 7 layer)

more sweets than should be legally allowed

My god, I thought our family was the only one in the world to do this (we use green olives with cream cheese). If you want to kick it up a little, pick up a bag of the mini bell peppers, cut them in halves or quarters and stuff those. It's delicious. I've also picked up a jar of olive mix and used that and it worked well, too.

It's not a holiday in our house without stuffed celery.
