I love the stuffed chickens from Hebert's in Maurice. I have found away to debone the chicken like they do. Anybody got a recipe for the rice stuffing?

Me too! Sucks being 2 hours from there. That's why I'm looking for the recipe so I can make my own

Before you do anything else... You need to learn how to debone a chicken! That's the key to the whole thing. After that figure out how to make a étouffée that won't get all mushy while being baked in the chicken then you should e good to go. I'd say use long grain or extra long grain rice.

I have deboned a couple. Not saying I'm great, but I'm getting better.

I get the stuffed chickens from Chris' Specialty Meats every now and then, and they're ok...Would the chickens from Hebert's be a lot better?

Change the thread title. The place is not called Herbert's it is Hebert's. And yes, they have the best stuffed chickens I have ever had.

Thanks, didn't catch the spelling error!

I have tried a couple others and find theirs to be better. I have cooked theirs and one from Don's while at the camp. I preferred Hebert's, but one buddy liked Dons because he said the outside wasn't as seasoned as much as Hebert's. To each his own. Anybody got a recipe for the stuffing?
