Steel Grilled Smashburgers

It was a pleasant late Saturday afternoon and burgers were on the menu. I decided to use the gas grill and started with griddling some sliced onions down with a lil butter on the grilling steel.
These were nice 5.5 oz loosely formed patties I made earlier in the day seasoned with a Sweet Mesquite Seasoning, a lil salt and black pepper. After placing on the steel they were smashed down to make them thinner.
With the steel being over 500 degrees it didn't take long for the burgers to cook.
When I got to the last couple of burgers to cook there were little heat/smoke devils(like dust devils/tornadoes)that were coming of the hot steel. pretty cool they got about two feet tall.
A little butter on my bun and toasted.
Time to eat!!!
I considered making french fries but instead decided on having baled potatoes with the burgers instead. These were lightly coated with bacon drippings and seasoned with Kosher salt then baked. Mine was stuffed with butter(of course), sour cream, crumbled bacon, fresh snipped green onions, mushrooms and not pictured because I almost forgot it, shredded cheddar cheese. That was really good!
As much as I love a grilled burger cooking the on the steel gives them a crust that pushes it over the top.
Needless to say I was stuffed after eating this meal.

Looks good. Try putting salt on the griddle then putting the burgers on. Really crisps them up.

I just cannot have my patties that thin.
